Creamy Celery Soup

1 1/2 cups water

2 cups diced celery

1 medium onion, finely chopped

2 tablespoons olive oil

4 tablespoons flour

3 cups LACTAID® Fat Free Milk

1 teaspoon salt

1/8 teaspoon pepper

1/8 teaspoon dried basil


  1. In a small saucepan, cook celery and onion in water for 10 minutes. Set aside.
  2. In a 2 1/2 quart saucepan, heat olive oil and whisk in flour, cooking until flour is absorbed.
  3. Add LACTAID® Fat Free Milk to flour mixture and cook, stirring constantly until thick. Add cooked celery and liquid. Season with salt, pepper and basil.
