2 tablespoons olive oil
1/2 cup finely chopped onion
2 cups low-sodium chicken broth
1 1/2 cups LACTAID® Fat Free Milk
1 1/2 cups canned pumpkin
2 tablespoons brown sugar
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon lemon juice
- Heat olive oil in a 2 1/2 quart saucepan. Add onion and cook for about 2 minutes.
- Add chicken broth, LACTAID® Fat Free Milk, pumpkin, sugar, salt and nutmeg and bring to a boil, and simmer for 15 minutes.
- Add lemon juice and serve while warm.
